Balsamic glazed Pork Chops with Cherries

We are not big pork fans however my husband gave this dish a pretty high rating on the scale of “would you eat it again”

 

Simple and easy recipe of course since I was making it.

You may want to double it, but I was cooking for two.

2-3 Boneless pork chops
1/4 cup Balsamic dressing
1/2 sweet onion sliced thin
1/2 cup chicken stock
1/2 cup dried cherries
salt and pepper to taste
2 TBS butter

Drench the pork chops in dressing.  let marinate for a few hours or overnight

In a cast iron pan melt your butter and place your pork chops (throwing away the extra sauce) in your pan.   Cook both sides a few minutes and remove.

Add to your pan the onions, broth, and cherries, scraping up all the yummy pieces of pork.  Bring to a boil.

Return the pork to the pan, salt and pepper according to how much you like and simmer until meat is done and sauce has thickened.  Salt and pepper can always be added later so I am usually pretty careful with it while cooking unless a dish requires it for the actual cooking process.

The time it will take will depend on the size of the pan, the thickness of pork, etc……
