Quinoa Stirfry

I have never tried to do a stir fry with Quinoa but I am not a big fan of white rice and brown rice gets boring so I thought what the heck.  I am always trying to add more quinoa into my diet and now with the success of this dish I can.

(Keep in mind I roasted a turkey so I am working with precooked turkey meat this week)

Place one cup quinoa plus two cups chicken broth or water into your rice cooker.

while your quinoa is cooking take one bunch of bok choy and cut off the end.   chop up into bite size pieces.  Take one carrot and chop it up fine or just place into a mini food processor.   Saute these in about 1 tablespoon grape seed oil for about 4 minutes.   Then add about two cups of chopped up turkey meat (precooked) and your sauce.

sauce:  2.5 TBSP white wine vinegar ~ 1.5 TBSP Lime Juice ~ 3/4 cup honey ~3/4 cup tamari gluten-free soy sauce ~ 1 Tbsp dried onion flakes ~ 1.5 tsp ginger ~1 tsp garlic powder.

saute the veggies and meat in the sauce and when well mixed add in the quinoa  plus 1 cup of frozen peas.   The heat of the saute should melt the peas enough to be warm but you are not sauteing them so they dont’ break up and get mushy.

It isn’t the prettiest dish but is sure does taste good,  I have included an up close and personal photo of my dinner tonight.
